Eggplant parmigiana: 

Make a simple marinara sauce recipe:

1 medium onion chopped

6 medium garlic cloves chopped

1 tablespoon crushed red pepper

salt & pepper to taste

1 bunch parsley and basil chopped

1 28oz. can of Italian whole tomatoes in puree

Make a simple tomato sauce.

Eggplant Parmigiano Recipe:

Cut eggplant into 1 inch slices, brush with olive oil and salt & pepper. Using a table top grill cook until done 10 to 15 minutes. Remove eggplant; turn on oven to 400 degrees (204 celsius). Top the cooked eggplant with warmed tomato sauce, seasoned breadcrumbs and Romano cheese, lightly brown and serve. Fabulous!
