I see now in this larger shot that perhaps it was not being flambeed after all. Definitely heated... please tell me more about the way it was prepared and throw in a flavor too.

What kind of sorbet?  Mango?  Most any kind of sorbet will do . . . Almost any kind of ice cream (except sweet corn, red bean or plain boring vanilla) will do, too. LOL!  At least you are being well fed on your travels.  Cheers (or nastroviya?), votre Amie
